Fish Lavangi
Lankaran fish dish is one of the best examples of Azerbaijani cuisine. The most delicious lavangi is cooked only from kutum fish caught from the Caspian Sea.
Ingredients:
- 1 piece of cuttlefish
- 500 g of red onion
- 400 g of walnuts
- 300 g of crushed cherries
- 150 g of butter
- salt, pepper
Preparation:
The scales of the fish are cleaned, gutted, washed well and dried. Salt and pepper are sprinkled inside and on top.
The onion is passed through a meat grinder, the juice is squeezed out. Nuts are ground and mixed with onions. The stuffing is stuffed inside the fish, adding cherry pulp, salt and pepper to taste. It is baked in the oven at 180 degrees for 30-40 minutes.
Tip: If the fish has spawn, do not throw it away. You can cook levangi by adding the curry to the filling. As with all fish dishes, narsarab is usually served with lavengi.
