Balva
Balva is an ancient Azerbaijani dish that is cooked mainly in spring. The main ingredients of the dish are sweat greens, rice and broth. Due to the characteristics of different regions, there may be changes in the composition of the food, so we present you the most common recipe of balva.
Ingredients:
- 150 g of rice
- 100 butter
- 1 medium onion
- 2 bunches of spinach
- 2 bunches of coriander
- 1 bunch of dill
- 1 bunch of parsley
- 1 bunch of cabbage
- 1 bunch of green onions
- salt, pepper
Preparation:
Rice is pre-washed and soaked in a bowl. Greens are cleaned, washed well. Finely chopped onion is fried in oil, the same kind of finely chopped greens are added and mixed. After greens and onions are fried together, rice is added, the broth is filtered and cooked. At the end, salt and pepper are sprinkled to taste.
Tip:
If you find fenugreek, be sure to add it to this dish. You can add a beaten egg shortly before the soup is cooked and mix well. Also, dry or fresh cherries can be added to the balma according to taste.
