Meatball-Bozbash

Kufta-bozbash is one of the most famous dishes of Azerbaijani cuisine. The meatball itself and the dishes prepared from it are the result of the influence of Turkish food culture. Therefore, in many countries from Europe to China, similar meatball-like dishes made without minced meat can be found.

Ingredients:
- 250 g of beef
- 250 g lamb meat
- 100 g of round rice
- 150 g of peas
- 70 g of dried cherries
- 200 g of potatoes
- 1 egg
- 2 medium-sized onions
- oil
- dry mint
- yellow ginger
- salt
- pepper

Preparation:
Peas are pre-soaked in a bowl with water added to them and cooked. Meanwhile, veal and lamb are minced together with 1 onion. Lumpy rice, dry mint, salt and pepper are added and kneaded, cut into 80-gram portions, made into meatballs, and placed in the refrigerator.
1 onion is fried in oil, medium-sized chopped potatoes, carrots, cooked peas and meat broth are added to it and boiled. When the broth begins to boil, meatballs are added.

Tip:
Peas are tastier if they are cooked in meat broth. A little tail oil can be added 15 minutes before cooking. Saffron juice can be used instead of saffron, it should be added 5-10 minutes before the soup is fully cooked.
