NARDANCHA PLOV
Delicious and unsatisfying Nardana floor plov is one of the most easily prepared types of plov. The name of this dish is mentioned in the memoirs of father Dumas, a writer and chef, about his trip to Shamakhi in 1858.
Ingredients:
- 500 g long rice
- 100 g of albukhara
- 100 g of chestnuts
- 50 g of yellow raisins
- 50 g of granulated pomegranate
- 2 medium onions
- 1 whole cholpa
- vegetable oil
- butter
- yellow ginger
- salt, pepper
Preparation:
The rice is pre-soaked in water, and the chicken is boiled. In the meantime, onions are cleaned, cut into thin half rings and fried in oil. Boiled chestnuts, apricots, and raisins are added to it. Salt, pepper, yellow carrot are sprinkled and mixed, then pomegranate is added and removed from the stove.
Rice is boiled in salted water and filtered.
Butter is added to the pot, fried onions and dry fruits are added first, then rice is added. A whole cholpa is placed in the middle, onions and rice are added to it and boiled. It is cooked until the aroma comes out.
