IN OVERSEAS
Övrishta is one of our ancient dishes, considered the pearls of Sheki cuisine. Although some people confuse this dish with noodles due to the similarity of the name, ovrishta is a very tasty meat dish made from completely different ingredients.
Ingredients:
- 200 g of cholpa
- 150 g of dried cranberries
- 100 g of crushed cranberries
- 100 g of butter
- 70 g of walnut kernels
- 2 medium-sized onions
- salt, pepper
Preparation:
Cholpa is cleaned, divided into medium-sized pieces and cooked in an oiled pan until browned on all sides. Finely chopped onions are added to it and fried together. Walnut kernels are chopped and added to the pan together with cranberries and mixed. After the ingredients are roasted a little, cranberry paste is spread over it, salt and pepper are sprinkled, and it is fully cooked.
Tip: You can boil the village chicken in a little water beforehand and then fry it.
