Gogal
Gogal, which belongs to our national cuisine, is considered one of the symbols of Novruz holiday. Its filling made of aromatic spices gives it a special taste and richness. In some regions, mulberry soup is served as a substitute for bread.
Ingredients:
For the dough:
- 1 kg of flour
- 400 ml of milk
- 50 g of butter
- 50 g of clarified butter
- 10 g of powdered sugar
- 12 grams of yeast
- 20 g of salt
- 1 egg
- yellow ginger
For the filling:
- 150 grams of flour
- 50 g of butter
- 1 teaspoon of cumin powder
- 1 teaspoon of fennel
- 1/2 teaspoon of turmeric
- salt, pepper
For the top:
- 1 egg yolk
- black cumin
Preparation:
Warm milk is mixed with yeast and powdered sugar and kept outside in a warm place for fermentation. Then all the ingredients for the dough are mixed in a large bowl with the addition of fermented milk. The dough is kneaded so soft that it will not stick to the hands, and it is waited for about 1 hour.
In the meantime, the ingredients for the filling are added to a bowl, mixed, and roasted on the stove until it changes color. The leavened dough is divided into 7 logs of the same size and rested for 10-15 minutes. Melt the butter in a medium-sized pan, spread the logs into a thin layer and spread the melted butter over each layer. Thus, all the tops are opened on top of each other, after the last log is spread and greased, the stuffing is sprinkled on it and rolled in the form of a roulette. The folded dough roulette is cut into parts of the same size, spread a little by hand and give a flat mulberry shape. Egg yolk is applied with a brush, breadcrumbs are sprinkled on it and it is baked in the oven at 200 degrees until golden color.
Tip:
You can decide the size of the balls when dividing the roulette, and you can make relatively small or large sizes.
