Riza Kufta
Riza kufta, also known as Rza kufta, is one of the national dishes of Azerbaijani cuisine. This dish is also very popular in modern Iran, where our compatriots live.
Ingredients:
- 250 g minced beef
- 250 g of lamb mince
- 150 g of tomatoes
- 70 g of butter
- 2 medium-sized onions
- 10 g of cinnamon powder
- 1 bunch of coriander
- salt, pepper
Preparation:
Minced lamb and veal are mixed with 1 chopped onion and salt in a bowl, divided into small meatballs. The meatballs are placed in the refrigerator and kept a little to harden.
The other onion is cut into cubes and fried in oil. Tomatoes are peeled, chopped and added. It is made semi-solid, semi-liquid like a sauce. Cinnamon, salt and pepper to taste, meatballs are added and cooked together. While serving, you can sprinkle finely chopped coriander on it.
Tip:
To taste, you can add lemon juice mixed with water or abgora (juice of unripe grapes used instead of vinegar).
Riza kufta can be served as a separate dish or as an addition to pilaf.
