Beautiful
The forgotten dish of Azerbaijani cuisine belongs to Absheron region. In the past, it was cooked in the homes of noble families. As one of the favorites of winter time, this dish is usually served as a side dish.
Ingredients:
- 250 g long rice
- 100 g of oil
- 15 g of powdered sugar
- 2 eggs
- 1 medium onion
- lemon salt
- saffron
- cinnamon
- salt, pepper
Preparation:
Long rice is pre-soaked for 30 minutes and boiled after adding salt. The water is filtered and boiled.
While the rice is brewing, finely chopped onions are fried in an oiled pan, spices are added and mixed. Eggs beaten with a fork in a bowl are added to the pan and all the ingredients are cooked together.
Shashandaz is served over steamed rice until fragrant.
Tip:
In some places, meat, sour-sweet sauces like abgora, and crushed sour berries are added to shashandaz, these options of the dish are also very tasty.
You can also reduce or increase the spices according to your taste.
