QUIET

Surhullu is a pastry belonging to the north-western zone of Azerbaijan, mainly to Gakh, Zagatala and Balakan regions.

Ingredients:
- 700 mg boneless lamb meat
- 500 gr of flour
- 100 g of tomatoes
- 100 g of crushed cranberries
- 100 g of butter
- 2 medium onions
- 1 clove of garlic
- 1 glass of water
- salt, pepper

Preparation:
Dough is kneaded from flour, water and salt. It is divided into logs, not very thin tops are spread and chopped. The cut pieces of dough are made smooth by rubbing with the finger and spread on a baking sheet sprinkled with flour to rest.
Lamb meat is cut into small pieces, fried in oil with finely chopped onions. Chopped tomatoes and cranberry puree are added to it, sprinkled with salt and pepper and cooked together.
It is boiled in boiling water for 10 minutes, filtered, and served after adding meat roast.
