Three - 3 Bacı Dolma
The name of this dish is made from a combination of 3 different vegetables. Despite the fact that the filling is the same, the unique flavor of each vegetable makes the dish very delicious. There are even many people who like this dish not as a whole, but with filling made from certain vegetables.
Ingredients:
- 200 g of beef
- 200 g of lamb meat
- 100 g of lamb's tail
- 100 g of butter
- 5 almonds
- 5 pieces of pepper
- 5 tomatoes
- 2 medium onions
- 1 clove of garlic
- 1 bunch of green basil
- 1 bunch of black basil
- yellow ginger
- cinnamon
- salt, pepper
Preparation:
Vegetables are washed, peppers and tomatoes are hollowed out and cleaned. Cut the eggplants in half lengthwise. Eggplants are lightly fried, not fully cooked.
In another bowl, beef and lamb are minced and fried with finely chopped onions. Pomegranate, chopped basil, carrot, cinnamon, salt and pepper are sprinkled on it and mixed. Vegetables are stuffed with the prepared mixture and cooked on high heat for 20 minutes.
Tip:
You can change the herbs and spices according to your taste, without using cinnamon, you can also cook this dish with herbs like coriander and fennel.
In the Nakhchivan area, dolman meat is prepared by cutting it into very small pieces, not minced meat. Also, in places like Baku and Nakhchivan, flaked chickpeas are added to the filling. In this case, peas should be pre-soaked.
