Umac Soup
Umac is one of the most popular types of soup in Turkic-speaking peoples. You can find this dish in Tatarstan, Turkey, and various regions of Azerbaijan. Under other names, this dish can be found in regions where there was a Turkish influence. For example, in Russia there is "zatirukha" soup, similar to umacha, prepared by the peasants in ancient times.
Ingredients:
- 200 grams of flour
- 70 g of butter
- 1 egg
- 1 medium onion
- 1 glass of water
- broth
- saffron
- dry mint
- salt, pepper
Preparation:
First, the flour is mixed with a small amount of water and left to dry. Finely chopped onions are then fried in oil, the broth is strained and saffron is added. When the soup begins to boil, the umac is added. At the end, beaten eggs are added and mixed, sprinkled with salt and pepper to taste. While serving, you can sprinkle some dry mint on it.
Tip:
In Turkey, there is a way of preparing this dish by pinching the unleavened dough into small pieces and adding it to the soup. This type of soup is really delicious. If you like it spicy, you can add paprika or ground chili pepper to the umaca. Thus, you will protect yourself from cold.
