Leaf hook
Leaf khangali is one of the easiest types of this dish to prepare. Leaf khangali, which is a favorite dish of cold weather with a very simple cooking method, is prepared in the same way in almost all regions of Azerbaijan.
Ingredients:
- 500 gr of flour
- 250 g minced beef
- 200 g of lamb mince
- 150 g of butter
- 230 ml of water
- 2 medium onions
- 1 egg
- yellow ginger
- garlic
- yogurt
- salt, pepper
Preparation:
The dough is kneaded with flour, water and salt and rested. Then, dividing into middle logs, thin tops are spread, cut into squares and dried.
The onion is finely chopped and fried in an oiled pan together with minced meat.
Dry khangals are cooked by adding them to boiling water. It is filtered and served with roasted minced meat.
Tip: You can also add pomegranate seeds to the mince. In some places, small chopped potatoes are also added to the minced meat.
